Shells With Grilled Chicken And Mozzarella

Seasoned and grilled chicken mixed with cooked pasta, grape tomatoes, fresh mozzarella, fresh parsley, Parmesan cheese and butter.
Ingredients -
Coarse Salt and Fresh Ground Black Pepper
Vegetable Oil, for grill rack
1-1/2 pounds Chicken Cutlets
8 ounces Medium Pasta Shells
Coarse Salt, to taste
Fresh Ground Black Pepper, to taste
1 pint Grape Tomatoes, halved
4 ounces Fresh Mozzarella, cut into 1/4-inch cubes
1/2 cup Fresh Parsley, chopped
1/4 cup grated Parmesan, plus more for serving
2 tablespoons Butter
 
Preparation:

1. Add water to a large pot. Bring to a boil. Add a pinch of salt.

2. Lightly oil grill rack, and preheat grill to medium.

3. Season chicken with salt and pepper.

4. Grill chicken 3-5 minutes per side.

5. Remove from grill, allow to rest and cut into thin strips. Halve any long strips.

6. Cook pasta according to package directions.

7. Reserve 1 cup pasta water. Drain pasta. Return pasta to pasta pot.

8. Add grilled chicken pieces, grape tomatoes, mozzarella, parsley, Parmesan and butter. Toss to combine.

9. Add reserved pasta water a small amount at a time to create a sauce that coats pasta shells. Don’t use all the water unless necessary.

10. Serve with additional Parmesan.

Cook Pasta With Ample Water
Always use a pot large enough to comfortably hold the pasta and cover the pasta with twice the volume of water.
