Raisin And Red Apple Chicken Pasta Salad

Whole wheat rotini pasta combined with cooked chicken, raisins, apples, green onions, and a mixture of mayonnaise, honey, Dijon mustard, and toasted slivered almonds.
Ingredients -
2 1/2 cups Uncooked Whole Wheat Rotini Pasta
2 cups cubed Cooked Chicken Breast
1 cup Raisins
1 Red Apple, cored, cubed
2 Green Onions, sliced
1/3 cup Light Mayonnaise
2 tablespoons Honey
1 tablespoon Dijon Mustard
1/4 cup Toasted Slivered Almonds
 
Preparation:

1. Cook pasta according to directions. Drain and rinse with cold water.

2. In large serving bowl, combine cooked pasta, cooked chicken, raisins, apple and green onions.

3. In separate small bowl, combine mayonnaise, honey and mustard.

4. Fold dressing into pasta mixture.

5. Serve immediately or refrigerate.

6. Top with toasted almonds just prior to serving.

Cook Pasta in Uncovered Pot
Cook pastas uncovered, at a fast boil. Stir pasta with a wooden spoon to insure that pasta moves freely and does not clump together.

Add Pasta to Boiling Water
Always add pasta to the water after it is boiling. Pasta quickly begins to break down in tepid water as the starch in the pasta dissolves. Intense heat of boiling water “sets” the outside of the pasta, and helps the pasta not to stick.
