Chicken With Parmesan Noodles

Fresh angel hair pasta mixed with carrots, chicken, basil pesto and Parmesan cheese.
Ingredients -
1 (9 ounces) package Refrigerated Angel Hair Pasta
4 large Carrots, thinly sliced
2 tablespoons Butter
1-1/2 pounds Skinless, Boneless Chicken Breast Halves
1/4 cup purchased Basil Pesto
1/4 cup finely shredded Parmesan Cheese
Olive Oil
Fresh Basil
 
Preparation:

1. Cook pasta according to directions.

2. Meanwhile, add carrots and 1-tablespoon butter to large skillet. Cook carrots 3 minutes over medium heat.

3. Add chicken; continue cooking 4-5 minutes until no longer pink.

4. Add pesto. Toss to coat.

5. Drain pasta in colander. Return pasta to pan and toss with remaining butter.

6. Serve pasta with chicken mixture.

7. Sprinkle with Parmesan cheese.

8. Drizzle with olive oil and top with basil.

Noodles have a more intense color than other pastas because egg solids are added to the pasta during the production process.

Dried Pasta
Most dried pastas will double in volume when cooked. Be sure you take this into account and have more than adequate water for boiling.
