Chicken Penne In Smoky Chili Cream Sauce

Penne pasta mixed with sauteed onion and garlic, adobo sauce, chili powder, maple syrup and salt. Pasta mixture is combined with cubed chicken breasts, crumbled bacon and fresh cilantro.
Ingredients -
12 ounces Penne Pasta, uncooked
1 1/2 tablespoons Vegetable Oil
1 pound Boneless, Skinless Chicken Breasts, cut into 3/4-inch chunks
1/3 cup chopped Onion
1 teaspoon minced Garlic
2 cups prepared Alfredo Sauce
1 tablespoon Chipotle in Adobo Sauce
2 teaspoons Chili Powder
2 teaspoons Maple Syrup
1/2 teaspoon Salt
8 slices fully Cooked Bacon, heated in microwave and chopped
2 tablespoons chopped Fresh Cilantro
 
Preparation:

1. Cook pasta according to package directions. Drain.

2. While pasta cooks, heat oil in large skillet over medium high heat. Cook chicken 4 minutes or until cooked through.

3. Remove to a plate and reserve.

4. Reduce heat to medium.

5. Add onion to skillet and cook 3 minutes, stirring occasionally.

6. Add garlic to onions and cook 30 seconds.

7. Stir in the Alfredo sauce, in Adobo Sauce, chili powder, maple syrup and salt.

8. Cook over medium-high heat until bubbly. Stir in the chicken.

9. Place cooked pasta back into pot and stir in Alfredo and chicken.

10. Spoon pasta onto a large serving platter.

11. Garnish with bacon and cilantro.

Rinsing Pasta for Pasta Salad
When making pasta for pasta salads, rinse the pasta in cold water to rinse off starch. This removes some of the starch, otherwise the pasta will be sticky and gummy.
