Chicken Noodle Casserole

 
Ingredients -

1 large White Onion, diced
1/4 cup Butter
3 (10 ounces each) cans Chicken Chunks
1 (16 ounces) container Sour Cream
1 can Cream of Chicken Soup
1 can Cream of Mushroom Soup
3 cups shredded Cheddar Cheese
1 (8 ounces) package Uncooked Egg Noodles
4 ounces Buttery Round Crackers, crushed

 
Preparation:

1. Turn the oven to 350 degrees and preheat.

2. Melt the butter in a medium skillet and sauté the onion until just softened.

3. Pour the onion into a 13x9-inch baking dish.

4. Combine the chicken, soup and sour cream in a large bowl and stir well to blend.

5. Add 2 cups of cheese and the egg noodles and stir well.

6. Pour the soup mixture over the onions in the pan.

7. Sprinkle the crushed crackers on top followed by the remaining 1 cup of cheese.

8. Bake until the noodles are soft and the top is golden brown, which takes about 30 minutes.

 



Cooking Tip
Cooking Chicken Thoroughly
If you have small children, elderly people, or those with compromised immune systems, it is particularly important to cook chicken thoroughly. These groups are more likely to be susceptible to contamination from salmonella, which is the bacteria that causes food poisoning. Several hundred people per year die from food poisoning, so make sure to cook chicken to an internal temperature of 165-170 degrees F.
