Chicken Fettuccine

Classic chicken pasta dish combines sauteed chicken with garlic, extra virgin olive oil, fettuccine noodles, milk, swiss cheese and sprinkled with ground nutmeg.
Ingredients -
2 Boneless, Skinless, Chicken Breasts, cut into bite size pieces
2 cloves Garlic
1 tablespoons Extra Virgin Olive Oil
2 quarts Water
1/2 pound Fettuccine Noodles
1/2 cup Milk
2 ounces Swiss Cheese
Ground Nutmeg, to taste
 
Preparation:

1. Add 1-tablespoon olive oil to skillet. Heat over medium heat. Saute chicken with garlic.

2. Add water to large saucepan. Add noodles. Cook 9 minutes or until al dente.

3. Drain and return pasta to pan. Reheat over low heat with milk, Swiss cheese and chicken.

4. When warmed through, transfer to serving dish and sprinkle with nutmeg.

5. Adjust cheese to taste.

Choose the Right Pasta Shape
While shaped pastas are better for chunkier sauces, long flat pastas are best with thin pasta sauces.

Do Not Rinse Pasta After Cooking
If you are making pasta for use with sauce, do not rinse after cooking, just drain pasta in a colander. Not rinsing leaves the starch intact on the outside on the pasta, which adds flavor, and allows the sauce to adhere more easily.
