Chicken and Peanut Noodles with Onions

 
Ingredients -

2 (3 ounces each) packages Fried Rice Noodles, broken up
1 Red Bell Pepper, seeded and thinly sliced
2-1/2 cups boiling Water
1/4 cup Creamy Peanut Butter
1 tablespoon Low Sodium Soy Sauce
1 tablespoon Rice Vinegar
1/4 teaspoon Sugar
1/4 teaspoon Red Pepper Flakes
1 (9 ounces) package Precooked Chicken Breast Strips
2 Scallions, thinly sliced

 
Preparation:

1. Bring the rice noodles, red pepper and water to a boil and allow the mixture to sit for 5 minutes, occasionally stirring.

2. In another bowl, combine the soy sauce, peanut butter, vinegar, sugar and red pepper flakes and whisk well.

3. Drain the noodle mixture, reserving 1/2 cup of the water.

4. Add the noodles and chicken to a serving bowl and pour the soy sauce mixture over the top.

5. Toss well to combine, adding the reserved water as needed to thin out the sauce.

6. Sprinkle the scallions on top and serve immediately.

Chicken Grown Commercially
Most of the chickens grown commercially are a cross between the British Cornish breed and the White Rock, which is a breed developed in New England in the mid-1800’s. The White Rocks were bred for their meatiness and docile behavior, as well as being excellent layers.
