Baked Stuffed Chicken Breasts with Egg Noodles

Chicken breast halves are butterflied and stuffed with a mixture of broccoli, cream cheese, shredded cheddar cheese, bread crumbs, salt and pepper. Chicken breasts are browned on the outside and baked until cooked through.

Ingredients -
6 Boneless Skinless Chicken Breast Halves
4 ounces of 1/3 Less Fat Cream Cheese
1 package Frozen Broccoli, thawed, chopped
1/2 cup Shredded Cheddar Cheese
2 tablespoons Seasoned Bread Crumbs
1/2 teaspoon Sea Salt
1/2 teaspoon Fresh Ground Black Pepper
Egg Noodles, cooked according to package directions
 
Preparation:

1. Heat the oven to 350 degrees.

2. Remove tenders from chicken.

3. Cut a pocket into the breasts, cutting into but not through.

4. Soften the cream cheese slightly.

5. Combine the broccoli, both cheeses, bread crumbs and 1/4 tsp each salt and pepper in a medium sized bowl.

6. Stuff 1/3 cup into each of the chicken breasts.

7. Secure them with toothpicks.

8. Season the chicken with the remaining sea salt and fresh ground black pepper.

9. Brown the chicken in a skillet for 3 minutes.

10. Transfer the chicken to a baking dish.

11. Bake for 30 minutes, or until cooked through.

12. Serve with egg noodles.

Cream cheese is a fresh, soft, unripened cheese that is easily spreadable. Cream cheese is available in the dairy section of your supermarket and comes in variety of types and flavors.

Sea salt can be refined or unrefined. Refined sea salt is made from saltwater being boiled in large vats to the point of evaporation. Unrefined sea salt is harvested from seawater that has evaporated naturally.
